Compliment your Thanksgiving leftovers!

Since we were so spoiled with the Fall weather here in Minnesota, I feel it is finally time for some good comfort food. What better time than the Holidays to make those favorite dishes. Now that we just had Thanksgiving and we have those lovely leftovers, my thought is to compliment them with a healthy soup. 
My new favorite is Apple Butternut Squash Soup. It would go great with some turkey and stuffing. You could even just throw in some left over sweet potatoes for a nice little twist. 
 
All you need is:
1 large apple, cored and diced
1 whole butternut squash seeded, cooked and peeled 
1 tbsp. olive oil
1/2 small onion, peeled and chopped 
1 clove garlic 
2 cups vegetable or chicken stock 
A pinch of cinnamon, salt and pepper 
In a medium sauce pain , saute onion, garlic, apple and olive oil until tender. 
Place cooked squash, stock, cinnamon and apple mixture in blender and puree. This may have to be done in segments depending on the size of your blender. A food processor works great too! Once all ingredients are mixed into a fine soup, pour into a large pot on the stove, add salt and pepper and simmer for 10-15 minutes. Serve with a side of turkey and get cozy!!
Serves approximately 4 people
